Pastry:
1.5 cups of water
Half a teaspoon of salt
3 tablespoons of olive oil
1 tablespoon of lemon juice or raki
Flour (about half a kilo)
Filling:
250 g. of sour myzithra cheese or feta and 250 g of sweet cheese myzithra cheese, or 500 g. of sweet myzithra
1 egg
1 cup of sugar, grape must syrup or honey
1 spoon chopped mint (optional)
1 spoon cinnamon powder
Prepare the pastry dough with the ingredients given above. The dough should be fairly hard. Cover it and let it rest, preferably in the fridge. Prepare the filling. Roll out a medium-sized sheet of pastry, cut circles as large as a coffee saucer and add a teaspoon of the filling. Fold each circle into a semicircle and push the edges so they close tightly. Fry them in a lot of hot olive oil and serve with honey or sprinkled with hazel and cinnamon or even plain.
