How can I make flavoured olive oil?

Choose some herbs (rosemary, dill, mint, basil, tarragon) – either fresh or dried -, spices, garlic, hot pepper or lemon, and orange peel. These ingredients can either be combined or used individually.

Place 2 or 3 sprigs of your chosen herb in a glass bottle and add olive oil until it covers the herbs completely and the bottle is full. It is ready to use after two or three weeks. You can leave the herbs etc. in the bottle. When you start to use the olive oil and to reveal the flavors, it is a good idea to remove the herbs etc. so that the oil does not spoil.

Olive oil flavored with oregano and lemon peel is an unbeatable combination.

Flavoured olive oil is a wonderful marinade that can add flavour to salads, rice, boiled vegetables, potatoes, pasta, meat and fish, or be used as the main ingredient in a vinaigrette.

Tips:

Add your favorite herbs, a little vinegar and oil to an almost finished jar of mustard. Close it, shake and you will have a great vinaigrette in a minute!
